I personally spent over 15 hours irl and multiple seasons in game just breaking rocks in the volcano with no luck. I filled up two chests with stone and got no mummified bat. It has not been fixed yet. The last Switch update fixed other issues, such as the blue floor glitch. CA said he was still looking into the mummified bat issue and will fix it in a future update with no ETA. Also, I've accepted and completed the Qi bean quest twice now and still no mummified bat :( So YMMV unfortunately.
